Agroindustrial wastes can be suitable as substrates for amylases production given their low cost, availability, and significant concentration of starch. In the present study, we evaluated the production of amylases from the Bacillus amyloliquefaciens A16 strain in culture media adjusted to different pH and prepared from potato peels with 1.30 % w/v of starch. The media were incubated for 36 hours at 37°C and samples were taken every 12 h to quantify by spectrophotometry the residual starch using Lugol's solution for revelation to obtain crude enzyme extracts whose amylolytic activity was determined. The amylase activity produced in substrates prepared from potato peels were compared with that produced in 1 % starch broth used as a positive control. The highest amylase activity in potato peels media was 44.2 U /mL after 36 h of fermentation at 5.0 pH while the enzyme activity in 1% starch broth was 64.8 U/mL.
