In this work, the antioxidant activities of Origanum vulgare L., Rosmarinus officinalis L. and Coriandrum sativum L. essential oils were evaluated in water in oil (W/O) and oil in water (O/W) emulsions subjected to oxidative deterioration caused by exposure to UVA-VIS radiation. O. vulgare L. essential oil exhibited a higher antioxidant protection followed by the C. sativum L. and R. officinalis L. essentials oils in W/O emulsion (margarine). The O. vulgare L. essential oil has an antioxidant activity higher than C. sativum L., R. officinalis and vitamin E at 1, 10 and 20 g/kg. Moreover, in vitro antioxidant activities of the O. vulgare L., and C. sativum L. increased with their concentration in W/O emulsion (margarine). Finally, O. vulgare L. essential oil antioxidant activity was lower in O/W emulsion.
