Abstract

The article analyzes the network of actors and the construction of the market in alternative food circuits of the metropolitan area of Buenos Aires (AMBA), as well as the devices employed, focusing on dairy products whose technological and regulatory characteristics hinder their insertion in selling channels that differ from the predominant model of food supply. The methodology used in the research was fundamentally qualitative, including participant observation, in-depth interviews with key informants, literature review, and analysis of documents and virtual content of the selected experiences. The results obtained reveal that the dairy items exchanged in these circuits are permeated with distinctive characteristics, as its production based on the use of environmentally friendly practices or by actors belonging to the social economy, and the employ of marketing channels aimed at achieving a greater proximity to the consumer (short food supply circuits). However, the analysis reveals that they differ in a fundamental aspect -the criteria for the definition of prices- that is related to their positioning regarding the conventional food system. It also indicates overlaps with elements and actors of this system, not being able to assert itself as an univocal model of differentiated food supply.
