Abstract

The food industry waste has a great potential as a source of high value-added components. In this research, it is evaluated the chemical characterization of waste produced in the cultivation (vine shoots) and production (i.e skins, stalks and seeds) of Isabella grape juice. The waste is characterized through the quantification of the total phenolic compounds and the antioxidant activity. The analysis showed that the stalks and the seeds have the highest concentration of total phenolic components (22,08 ± 0,20 y 10,62 ± 0,17 mg gallic acid equivalent/g) and the highest antioxidant activity (0,29 ± 0,01 y 0,63 ± 0,01), respectively. As a conclusion, the stalks and seeds have great potential as raw material for the recovery of antioxidant activity components, which could be used in: creams, functional foods and fortified foods formulation. However, the goodness of the components with antioxidant activity from seeds is better known and recognized than from the stalks. Therefore, the challenge to exploit the seeds potential is in how to extract it industrially. On the other hand, more research is required understand the goodness and application of phenolic components from the stalks.
