This article looks at the changes and continuities of the gastronomic heritage of the Afro-descendant population which has migrated to the city of Medellin from the town of Cantón de San Pablo (Chocó). It looks at the reproduction of this gastronomic culture from the flavors and practices learned in Chocó and its integration with practices learned in the city. The study shows how some gastronomic practices and uses are maintained and how others are transformed and fused with other local and globalized gastronomies.
