Abstract

With the purpose of increasing the shelflife of Andean blackberry at postharvest, fruits at the maturity grades 3 and 5 (after Icontec) were placed in active modified atmosphere conditions with gas concentrations of 25% CO2, 5% O2, 70% N2 and 20% CO2, 10% O2, 70% N2 using packages of polyethylene of low density (LDPE) and polypropylene (PP), caliber 2 (0,0350 mm). The storage temperature was 4 ºC with relative humidity ranged between 90% and 95%, and the time of storage was 16 d. Packaging in modified atmospheres decreased respiration rates and weight losses compared to fruits stored without modified atmospheres packaging. The pH, total soluble solids, and relation of maturity increased progressively in fruits during storage time, whereas titratable acidity decreased. Fruits at maturity grade 5 supported the quality characteristics up to 6 d of storage when they were wrapped in LDPE packages and subjected to active modified atmospheres with gas concentrations of 20% CO2, 10% O2, and 70% N2; the same beneficial behavior was observed on the fruits of maturity stage 3 in PP and active modified atmospheres with gas concentrations of 25% CO2, 5% O2, and 70% N2. The results indicate that packaging in active modified atmosphere conditions diminish ripening processes in blackberry fruit.
