Abstract

Objective. Evaluate the gutted and fillet yields of the besote (Joturus pichardi), as well as the nutritional quality and the degree of acceptance of its meat. Materials and Methods. Gutted and fillet yields were estimated on 20 fish caught in several rivers in of northern SNSM. The fish had an average length of 445.3 mm and an average weight of 1130.7 g. The nutritional value was measured using a proximal analysis. Acceptability of the meat was evaluated using the hedonic test on 20 people. Results. The gutted and fillet yields were 92.8% and 49.5%, respectively. The proximate analysis revealed: protein, 21.5%; fat, 5.3%; ash, 1.4% and moisture, 71.7%. These values provide a higher content of caloric value (135.26 Kcal/100 g), protein value (15.85 g/100 Cal) and nutritional value (0.619/100 g fillet) of filet. Conclusions. Comparing the results with other studies, bobo mullet has a high fillet yield and an excellent nutritional value suggesting it may be a promising fish for aquaculture in the Central American and Great Caribbean.
