Abstract

The determination of the physical characteristics of cocoa such as the bean index and the percentage of husk is a parameter of interest in the commercialization of dry cocoa. This methodology is supported by the Colombian Technical Standard NTC 1252, to determine the physical characteristics in the regional genetics FSV41, FEAR5, FLE2 and the universal genotype CCN51, cultivated in the municipality of Rionegro, department of Santander. This research was conducted with the main harvest of 2019 and the analysis of the information was valued in triplicate for each of the samples supporting the statistical analysis and the results obtained. The results present the FSV41 genotype with outstanding characteristics such as the large grain index and lower percentage of husk, in addition, the FSV41 genotype has fine attributes of flavor and aroma and is considered a promising genetic material of interest for its attributes in crop renewal and implementation of cocoa plantations for the economic and social contributions in the cultivated areas.
