Abstract

VAZQUEZ ZUNIGA, Iliana. "From how to eat a taco, to how to eat a mole": migratory experience and Mexican cuisine in Montreal's ethnic restaurants. Rev. colomb. antropol. [online]. 2023, vol.59, n.1, pp.32-56.  Epub Jan 01, 2023. ISSN 0486-6525.  https://doi.org/10.22380/2539472x.2403.

This article examines both the migratory experience and entrepreneurial initiatives of Mexican restaurant owners who have settled in the city of Montreal (Quebec, Canada). By describing narratives of diffusion and authenticity of Mexican cuisine, the author analyzes the stereotypes around Mexican immigrants as an ethnically subordinate group in the American society imagination and how restaurant owners confront it. New study veins are addressed in different labor niches than those commonly explored for the migration of Mexicans. The empirical evidence presented arises from postdoctoral research that aims to contribute to the studies on migration of Mexicans to new destination cities.

Keywords : Mexican immigrants in Montreal; ethnic restaurants; Mexican cuisine; Immigrant entrepreneurship; Mexico-Canada migration circuit.
