Abstract
SERPA GUERRA, Angélica M; HINCAPIE LLANO, Gustavo and ALVAREZ LOPEZ, Catalina. Determination of the isoelectric point of four leaf sources: cassava (Manihot esculenta Crantz) veronica and tai varieties, jatropha (Jatropha curcas L.) and gmelina (Gmelina arborea). Prospect. [online]. 2014, vol.12, n.1, pp.30-39. ISSN 1692-8261. https://doi.org/10.15665/rp.v12i1.148.
Protein extraction from agro-industrial waste is an alternative for the use and development of new products. For this reason, it is very important to know its isoelectric pH, where protein has a minimum solubility and thus precipitates. In this investigation, the isoelectric pH of proteins from 4 leaves: from cassava (Manihot esculenta Crantz) veronica and tai varieties, jatropha (Jatropha curcas L.) and gmelina (Gmelina arborea) was determined. Samples were treated with an alkaline solution (0.1M NaOH), and the protein extracted was precipitated using three pH values (4.0 to 4.25 - 4.5) and two different temperatures (room temperature to 50 °C). Cassava variety veronica and gmelina precipitates did not show statistically significant difference between the three-pH values. However, the isoelectric pH for cassava and jatropha tai was observed at 4.0 and 4.5 respectively. Jatropha had the highest extraction yield (31.24 % ) and the lowest precipitation at 50 °C.
