LORA SILVA, Rodrigo; LOPEZ ALAYON, Ana Patricia; GOMEZ, Rafael y BERNAL, Henry. EFFECT OF DOSES OF Fe, Cu, Mn, Zn, B and Mo ON REDUCEND AND TOTAL SUGARS AND ON FRIED QUALITY ON CREOLE POTATO (Solanum phureja). rev.udcaactual.divulg.cient. [online]. 2008, vol.11, n.2, pp.163-173. ISSN 0123-4226.
A research was carried out at El Rosal, Cundimarca, in a soil classified as Pachic Melanudands to establish the effect of levels of the micronutrients Fe,Cu,Mn, Zn,B and Mo on the total and reductor sugars contents in tubers of Creole potatoe (Solanum phureja) and its frying quality. The doses employed were: Fe (5-10-15 kg ha-1), Cu (8-16-24 kg ha-1), Mn (8-16-24 kg ha-1), Zn (5-10-15 kg ha-1), B (0.8-1.6-2.4 kg ha-1) and sodium molybdate (1-2-3 kg ha-1); and a check to micronutrients was inluded. A complete randomized block design with three reps of 20 m2 was used. For nitrogen, fosphorus and potasium, 700kg ha-1 of fertilizer grade 13-26-6 at planting time was used. On first class size tubers frying quiality, total and reductor sugars were determined for each experimental unit. The result showed a significant effect of the treatmeants on the content of total and reductor sugars. According to the fried quality test, contents lower 0.25% on dried base of reductor sugars showed good industrial quiality according to the color scale for Creole potatoe. Levels of 16-24kg Cu ha-1, 5-10kg Fe ha-1, 5kg Zn ha-1 and 0.8kg B ha-1, were the most adequate ones. These results indicate that under the conditions of the research it is necessary to apply suitable levels of Cu-Fe-Zn and B to get good quality in the tubers for the fried industry.
