The nutritional value and chemical characteristics of the E. oleracea species are well known; however, in the Colombian Pacific region, there are other little-known species from the Arecaceae family with potential value in terms of their bioactive compounds. The aim of this study was to determine the phenolic compounds content and the antioxidant capacity of three wild species from the Arecaceae family (palms). To achieve this objective, the edible parts of ripe E. oleracea, O. bataua and O. mapora fruits were subjected to ultrasound-assisted extraction using a hydroalcoholic mixture with different concentrations of acetic acid as the extraction solvent. The extraction process was optimized using a central composite design (CCD), which showed that the best extraction conditions were achieved with 65 % (v/v) ethanol and 0.5 % (v/v) acetic acid. The results of the purification process through column chromatography showed that both the crude extract and the enriched fraction of O. mapora had the highest phenolic compounds content (137.5; 224 g GAE/g DW), the highest total anthocyanins content (1.7; 3.5 mg C3G/g DW), and the best antioxidant capacity (DPPH method) (538; 1879 µmoles TE/g DW) compared to the same extracts and fractions of O. bataua and E. oleracea.
