In the last decade it is producing an increase on the gastronomic tourism, especially in wine tourism and oil tourism in Spain. There are increasingly more certified gastronomic routes which are certified, because there are synonyms of the quality of their products, attracting a big number of tourists that wish to meet the local products of the area. The oil tourism or the olive oil tourism can be a motor of development of the rural areas generating supplementary incomes for the farmers with a low level of rent. This research analyses a fieldwork made it on the south of Spain in 2008, where it is located the biggest cultivated surface of olive trees, analyzing demand of this kind of tourism from a socioeconomic profile and the existing supply to be satisfied. Among the obtained results, it is remarkable the lack of interest from the private organizations that it is not motivated for this development, and, on the other hand, the increasingly interest the cultivated fields, the oil process, etc. Two different synergies that together can work to develop a new tourism segment, generating new jobs, and therefore, wealth for these rural areas.
