The agricultural production causes impacts on the soil which alters its physical, chemical and biologicalcharacteristics. However, literature tells us about the recuperation of the soil’s characteristics when organic matter is added. In fact, organic matter restores the soil’s productive capacity. This reason motivated this project, which evaluated the changes occurred in the structural stability, retention of humidity, usable humidity, bulk density and consistency based on the application of fermented organic fertilizers (AOF) during two and eight years in a “vertichaplustalf”. This evaluation wasdone with cropsof vegetables, legumes, tubers and grasses. It is important to mention that the soil used for this experiment was during more than 50 years grown with potatoes in rotation with barley and this was done with the use of traditional agricultural techniques. During this time, the addition of organic matter was only used through stubbles. The results showed that the incorporation of organic fertilizers helped the soil, regarding its physical characteristics evaluated. The benefits of the use of organic fertilizers increase when it is done consistently.
