Animal production environments present factors that directly or indirectly affect living conditions, nutrition, reproduction and/or growth of different animal species, as well as propitiate bacterial development leading to infections by microorganisms of worldwide importance in public health, such as Escherichia coli bacteria with virulence and resistance potential that lead to difficult control and treatment in production, and to the circulation of strains among animal species and humans. The objective of the review was to describe virulence genes and their pathogenicity expressed by Escherichia coli, which circulate with greater prevalence in production environments in different animal species. A systematic review of the literature was carried out in the databases Medline, Lilacs, ScienceDirect, PubMed, Acopas, SciELO and Dialnet, using a combination of validated keywords in Spanish and English (gene, Escherichia coli, food chain, animal production, virulence, poululence, pathogenicity, cattle diseases, microbial drug resistance). It was identified that Escherichia coli variations (serotypes) present virulence mechanisms related to the generation of serious pathologies in young animals such as the production of colibacillosis with high potentials in the production of toxins, adhesins and cytotoxins responsible for cell damage, death, and economic losses to the products; due to this, preventive measures take a fundamental role in the care of animals for the generation of products with quality and safety.
