Our cities generate more and more waste which final disposal is made in open dumps or watercourses, creating a public health problem. The volumes of such waste are so big that collection and disposal costs get higher and higher. Despite this, organic waste is also a source of compounds that can be used, given their technological and nutritional properties. As a matter of fact, it has been recently demonstrated that citric waste has antioxidants that can be beneficial for human health. These substances can be used to produce functional food, adding them to massive use food such as sugar, salt, eggs and milk, positively impacting a great number of people. In the case of eggs, it would be necessary to intervene since the stance bird is being fed in order to add the substances to them. This is so because bioactive substances such as carotenoids in eggs depend on the diet of the animal, hence synthetic dyes are currently being used to feed those birds. The use of vegetable waste with a high carotenoid content taken from agricultural and livestock industries and stores, are a promising source of raw material for pre-mixtures for the feeding of laying hens and substituting synthetic dyes in order to get eggs with a better color and with a high content of functional substances, thus contributing to a healthy feeding and even to prevent chronic diseases. As a conclusion, it is possible to give an added value to vegetable waste with a high carotenoid content from agricultural and livestock industries and stores, using them as raw material for pre-mixtures that can replace the use of artificial dyes in the food for lying hens.
