The modification of natural polymers is carried out to expand their functionality and industrial uses. The use of microorganisms as an enzymatic source provides protection to biomolecules against environmental conditions, reuse, low cost, ease of cultivation and application. This study focused on the immobilization of Aspergillus niger and Rhizopus oryzae, as an enzymatic source for acylation and hydrolysis of starch. The extract of rice bran and scouring pad was used as support for its development, the acylation of the polymer was verified by IR and the determination of ISA, IAA and PH. Protein concentrations of 30,7 ± 0,3 and 24,9 ± 0,3 (mg/cm3 of support) were reached respectively, in the acylation model, a chemical modification of the polymers caused by the reaction conditions was observed , obtaining materials with variable functional properties. In hydrolysis, 40 % degradation was achieved, making it possible to obtain different starch derivatives. In this sense, the performance in hydrolysis, the protein concentration of the microorganisms, the scouring pad as support and the extract of rice bran as an enzyme inducing medium, promote this system as an economic alternative for industrial modification processes.
