Abstract

The objective was to determine the effect of probiotic Lactobacillus plantarum on Escherichia coli, Salmonella typhimurium, Clostridium perfringens and Staphylococcus aureus. Susceptibility testing was performed; inhibition in vitro and supernatant; viability bile and bile salts, pH (2,5; 4,5 and 7) and temperature (38 and 45°C); growth kinetics of L. plantarum; Additional analysis of peptides and organic acids by HPLC. Dicloxacillin, ciprofloxacin and penicillin susceptibility was observed for L. plantarum; Cephalothin to C. perfringens; Cefepime and ciprofloxacin for S. typhimurium; Cefepime for E. coli; and Cefepime and Cephalothin for S. aureus. Lactic bacteria inhibited pathogenic strains but did not inhibit supernatant C. perfringens. L. plantarum showed growth of 32,25 and 32,38 LN CFU/mL for 1 to 1,2% bile. 28,73, 28,59 and 28,02 LN CFU/mL to pH 2,5; 7. 4,5 and 31,58 and 31,03 CFU/mL for 38 and 45°C. The logarithmic phase was observed at 12:00 hours (32,04 CFU/mL, 4,85 pH, acidity 0,84, 4,79 mg/L of sugar, 1,59 mg/L of protein); identifying the VAR-TIR-VAL and methionine enkephalin Acetate peptides, and 74,20% of lactic acid in supernatant. We conclude that L. plantarum has probiotic characteristics.
