The aim in this paper is to analyze the set of activities, actions and processes that distinguish different actors involved in the distribution of food and drinks, and especially the so-called mo-dern traders, which means sellers who own shops or commercial units that have a focus on direct sales and services. This research is based on information of secondary sources specialized on this subject. Although some of them may approach from a global or regional areas, in general it refers to Mexico. This will contribute to the understanding of the new dominant pattern of supply and distribution of food that exists in this country. Thus, there will be a frame of reference to understand if the food offered correspond with the growth of the demand in quality, regularity, quantity and diversity.
